Sticky Chicken and Coconut Rice

Ingredients
- 8 Drumsticks or Thighs
- 1/4 cup Soy Sauce
- 1/4 cup Hoi Sin Sauce
- 1/4 cup Honey
- 3 Garlic Cloves, crushed
- 2 tspn Ginger
- 2 tspn Sesame seeds
- 1 cup Rice, washed clean
- 1 1/2 cups Chicken Stock
- 1 cup Coconut Milk
Method
- Mix sauce, honey, garlic, ginger and sesame seeds into a marinade and put in chicken
- Cover and leave for 2-6 hours
- Heat oven to 180C and bake chicken in dish until cooked
- Halfway through turn and baste with marinade
- Boil stock and coconut milk then turn down low
- Add rice, stir occasionally until liquid is absorbed
- Turn off heat and let sit for a few minutes
