Sticky Chicken and Coconut Rice

Ingredients
  • 8 Drumsticks or Thighs
  • 1/4 cup Soy Sauce
  • 1/4 cup Hoi Sin Sauce
  • 1/4 cup Honey
  • 3 Garlic Cloves, crushed
  • 2 tspn Ginger
  • 2 tspn Sesame seeds
  • 1 cup Rice, washed clean
  • 1 1/2 cups Chicken Stock
  • 1 cup Coconut Milk
Method
  • Mix sauce, honey, garlic, ginger and sesame seeds into a marinade and put in chicken
  • Cover and leave for 2-6 hours
  • Heat oven to 180C and bake chicken in dish until cooked
  • Halfway through turn and baste with marinade
  • Boil stock and coconut milk then turn down low
  • Add rice, stir occasionally until liquid is absorbed
  • Turn off heat and let sit for a few minutes
