




Sticky Date Pudding

Ingredients
- 200 g Dates, chopped
- 320 ml Water
- 1 tspn Bi Carb Soda
- 2 Tblspn Margarine
- 190 g Sugar
- 2 Eggs
- 1 cup SR Flour
- SAUCE
- 1 cup Brown Sugar
- 190 g Margarine
- 1 cup Cream
Method
- Boil dates and water, remove from heat
- Add Bi Carb Soda and stand for 5 minutes, process roughly
- Cream margarine and sugar, add eggs
- Fold in flour then date mix
- Pour into 20cm dish
- Bake 50 minutes in 180C oven
- SAUCE
- Boil brown sugar, margarine and cream for 3 minutes
- Pour over pudding and serve
