Sticky Date Pudding

Ingredients
  • 200 g Dates, chopped
  • 320 ml Water
  • 1 tspn Bi Carb Soda
  • 2 Tblspn Margarine
  • 190 g Sugar
  • 2 Eggs
  • 1 cup SR Flour
  • SAUCE
  • 1 cup Brown Sugar
  • 190 g Margarine
  • 1 cup Cream
Method
  • Boil dates and water, remove from heat
  • Add Bi Carb Soda and stand for 5 minutes, process roughly
  • Cream margarine and sugar, add eggs
  • Fold in flour then date mix
  • Pour into 20cm dish
  • Bake 50 minutes in 180C oven
  • SAUCE
  • Boil brown sugar, margarine and cream for 3 minutes
  • Pour over pudding and serve
