




Sweet Chilli Sauce

Ingredients
- 250 g Large Red Chillies, stalks removed and chopped roughly
- 3 cups White Vinegar
- 2 cups Sugar
- 2 cups Water
- 2 tspns Crushed Garlic Cloves
- 2 tspns Grated Ginger
- 1 tspn salt
- 2 Tblspn Golden Syrup, optional at end if needed
Method
- Combine water, sugar and vinegar in a saucepan and stir over heat until sugar is dissolved
- Added Chillies and simmer for 15 minutes
- Add salt, garlic and ginger to pot
- Blend with a stick mixer in the pan until all chilli is fine
- Simmer for another 20 minutes, or until mix is reduced to half of what you started with
- Sterilise jars and add mix, seal and let cool. Then refrigerate
