Thai Chicken Pizza

Ingredients
  • 2 tsp cashews
  • 1 tsp oil
  • ½ red onion
  • 250g continental [jar] Thai peanut curry sauce
  • 2 thigh fillets – diced small
  • ¼ cup Greek yoghurt
  • ½ cup bean shoots
  • ¼ Lebanese cucumber
  • 2 tsp coriander leaves
Method
  • Preheat oven to 250c
  • Place cashews on a baking tray and roast for 3-4minutes or until golden
  • Heat oil in a large pan over high heat
  • Add onion and chicken and cook for 2-3 minutes or until chicken has browned and onion has softened
  • Add Thai Peanut Curry sauce and cook over high heat a further 6-8 minutes or until sauce has thickened and reduced
  • Spread pizza base with chicken sauce then place the whole pizza straight onto your oven shelf
  • Bake for 5 minutes or until warmed through and base is crisp underneath
  • While pizza is cooking combine bean shoots and cucumber and coriander
  • Scatter over top of pizza, finishing with cashews and dollops of yoghurt
