




Thai Chicken Pizza

Ingredients
- 2 tsp cashews
- 1 tsp oil
- ½ red onion
- 250g continental [jar] Thai peanut curry sauce
- 2 thigh fillets – diced small
- ¼ cup Greek yoghurt
- ½ cup bean shoots
- ¼ Lebanese cucumber
- 2 tsp coriander leaves
Method
- Preheat oven to 250c
- Place cashews on a baking tray and roast for 3-4minutes or until golden
- Heat oil in a large pan over high heat
- Add onion and chicken and cook for 2-3 minutes or until chicken has browned and onion has softened
- Add Thai Peanut Curry sauce and cook over high heat a further 6-8 minutes or until sauce has thickened and reduced
- Spread pizza base with chicken sauce then place the whole pizza straight onto your oven shelf
- Bake for 5 minutes or until warmed through and base is crisp underneath
- While pizza is cooking combine bean shoots and cucumber and coriander
- Scatter over top of pizza, finishing with cashews and dollops of yoghurt
