




Thai Prawn / Fish Yellow Curry

Ingredients
- 18 Raw Prawns, peeled (substitute with cubed fish fillets)
- 1 Carrot, diced large
- 1 Can Coconut Milk
- 1/2 Jar Yellow Curry Paste
- 1 Tblspn Fish Sauce (Soy Sauce substituted)
- 1 Tspn Sugar
- 2 Medium Potatoes, cubed and cooked
- 2 Tblspn Zest of Lime
- 2 Tblspn Oil
- 1 cup water
- 1 Onion, cut into wedges
Method
- Stir Fry Curry Paste with oil over low heat and add Lime Zest
- Slowly add Coconut Milk, potatoes, carrot, onion, sauce, water, sugar and bring to boil
- Add Prawns, gently stir fry, then lower heat, for 2 mins.
