Velvet Pudding

Ingredients
- 3 cups milk
- 1/4 cup sugar
- 2 egg yolks
- 2 tablespoons cornflour
- Butter
- Vanilla essence
- Pinch of salt
- 2 egg whites
- 2 tablespoons sugar
Method
- Add all ingredients to a saucepan and whisk over high heat until custard texture forms
- Continue stirring until saucepan is taken off the stove
- Beat eggs and sugar until stiff and fluffy
- Pour custard mixture into a lightly greased baking dish
- Spread meringue mixture over top of custard
- Place baking dish inside a larger baking tray with water 1/2 way up the side of the custard dish
- Cook custard for 10-15 minutes at 200 deg C until meringue sets
