Warm Char Grilled Beetroot and Apple Salad with Walnut Dressing

Ingredients
- BEETROOT AND APPLE SALAD
- 3 beetroot, peeled and cut into thin wedges
- 2 large pink lady or gala apples, cored and cut into wedges
- ¼ cup walnuts, coarsely chopped
- 2 tbspn Chervil chopped
- WALNUT DRESSING
- ¼ cup walnut oil
- 1 tblspn verjuice
- 1 tspn grainy mustard
Method
- BEETROOT AND APPLE SALAD
- Brush walnut and apple wedges with some walnut oil and chargrill over high heat until just cooked
- Combine beetroot and apple wedges in a serving dish
- Pour dressing over. Toss gently and scatter with walnuts and chervil
- WALNUT DRESSING
- Combine all ingredients in a saucepan season to taste. Whisk over a low heat until warmed through
