Warm Poached Pears with Anglaise Sauce

Ingredients
- POACHED PEARS
- 4 pears, peeled
- 1L water
- 500g sugar
- 1 cinnamon stick
- ANGLAISE SAUCE
- 300ml milk
- 30g sugar
- 3 egg yolks
- ½ vanilla bean
Method
- POACHED PEARS
- Place sugar and cinnamon into pan with water. Bring to boil
- Add pears and poach until tender
- ANGLAISE SAUCE
- Whisk egg yolks and sugar together in a bowl
- Bring milk and vanilla bean to the boil in a saucepan
- Slowly add milk to egg mixture and combine
- Return milk mixture to saucepan and cook out over a low heat. Do not allow to boil as it will curdle
